    mayors who have issued policy statements trying to protect their
    constituents only to be overturned by the governor

    That is also true. In some states, cities may not have as much leeway as
    in others. In our state, I think the mayor of the largest city and the governor have bumped heads a time or two but they are mostly in-sync with
    their messages.

    fidonet is available to any system that can meet the basic requirements...

    1. present a FTN mailer when necessary
    2. send/receive netmail
    3. can poll another FTN mailer to send/receive mail and files

    that's it... they don't have to participate in echomail and they don't even need to be able to toss mail... as long as they can send netmail and receive it, that's a go... being able to reply to received netmail is also a
    good thing... some mailers have editors that can read netmail the mailer has unpacked from the packet(s)... other mailers cannot perform this feat of majik and require a mail tosser to extract the messages and place them
    somewhere they can be read and replied to...

    That is probably true, but there are some who have or do quite well.

    Emeril Lagasse is from Massachusetts, and Portuguese by descent.
    He moved to New Orleans, and learned Cajun at Commander's Palace.
    I met him in person, and was kind to autograph of one of his books
    I had bought as a gift. Signed it "BAM!" telling me the person I
    give it to would know what it means. Sure enough, he was right.

    Justin Wilson was not Cajun, being from Florida and definitely not
    of French or Cajun heritage. He did have the capacity to learn, and
    was very talented. Wrote several books, and his television show was
    fun. Lived most of his adult life in Louisiana, and was named an
    honorary Cajun.

    I learned Cajun cooking when I was a kid, not needing recipes. Tip
    O'Neil had a saying "All politics is local", but cooking is the same
    thing. I learned from those around me. When I got older I learned
    how to cook from recipes, and to adapt recipes to my liking.

    Cajun and Italian are my favorites, but not limited to those foods.
    Central Grocery Store in New Orleans was my favorite place to get
    muffaletto sandwiches. I finally found a suitable olive salad mix
    comparable to what was used in those sandwiches. Ms. Tupa never
    would tell anybody how she made it, keeping it secret from the whole
    world. I have her cookbook, with her autograph. But she did not
    include her recipe for the olive salad mix, as that is what made
    her muffaletto sandwiches so distinctive.

    There are many copycats, but none like the original. Central Grocery
    is on Decatur, as you know. I forget the name of the other place, not
    far from there, but their version is not nearly the same. Still good,
    and some folks do prefer theirs.

    The muffuletta bread is only made in New Orleans, not anywhere else
    to the best of my knowledge. Only other way to get it is to make it
    yourself. Fortunately, I have found a recipe for that, the lady who
    came up with it also having recipes for the muffuletta and olive
    salad mix. If you and others want to take the time to make your own,
    here is the url -

    Find the recipe on the index page and choose the ones you like.
    Making the olive salad mix is a time-consuming process, regardless
    of which recipe you use. But well worth the effort.

    There are a few brands that are good. But homemade is always best.
    And do remember to brush the insides of both sides of the bread with
    the oil from the olive salad mix, otherwise the bread will taste too
    dry.

    Now for gumbo file. Not all file is the same. Most is fake.
    Some totally tasteless. Others horrible. Many soak up nothing.
    But I know how to make it.

    Zatarans, a brand in New Orleans, used to sell a quality gumbo file.
    But then started doing something that totally destroyed their product.
    They cut their file with spices never meant to be included in file,
    changing the color from a dark olive green to a yucky gray. Other
    companies also did the same.

    File gumbo is ground sassafras leaves. 100% ground sassafras leaves.
    Nothing added. Many brands, such as Zatarans, no longer sell true file
    gumbo. Only way to get the good stuff is either to make it yourself,
    or get hold of Tony Chachere's brand (I did a check and comparison).

    What you get at dollar stoes is anybody's guess. Not even sure
    if it is compatible for humans.

    Mercy, mercy! Would it be okay to brandish loaded guns at peaceful
    protestors marching across your lawn? A couple in St. Louis did just
    that, and the DA wants to have them arrested and put on trial on
    various charges. You really should think twice before violating the
    first amendments those peaceful protestors have. Much better to join
    them, and help lead them on their way to wherever they are going.
